Things On Toast

Things on toast, there is no barrier. one of my favorites is crayfish on toast with semi dried tomato and basil pesto and bocconcini cheese.

Crayfish meat or cooked prawns are perfect for this light starter or indulgent lunch.

Semi dried tomato pesto can be made or bought.

 ( leggos semi dried tomato pesto is ideal)

 To make your own you will need.

1 cup packed sun-dried tomatoes (drained & quartered)

2 fresh tomatoes diced

150 grams fresh basil leaves

1/2 tablespoon pine nuts

1 clove garlic (minced)

1/4 cup freshly grated parmesan cheese

1/3-1/2 cup olive oil

Blend all together in your food processor and check for seasoning. Spoon into a glass jar, top with the extra olive oil and keep refrigerated.

For bocconcini cheese mama lucias is a great choice, just finely slice, place on a plate, cover and back in the fridge until needed


Ciabatta or your favorite sour dough is ideal, to prepare cut slices approximately 2.5 cm thickness. brush with some fruity olive oil and either grill lightly or bake in oven @ 180c for 4 mins.

Once your bread slices are ready brush liberally with semi dried tomato pesto, top with crayfish slices or 2 prawn tails per person, top with 3 slices bocconcini and finish in a hot oven to melt cheese and warm seafood or under a moderate grill.

Garnish with some rocket leaves and if you really want to go one step further, sprinkle lightly with your favorite parmesan. Enjoy


Another one of my favourites when it comes to things on toast, is proscuitto, roasted fig and goats cheese

  

You will need, 6 fresh figs, rocket, 3 prosciutto, parmesan cheese, balsamic vinegar, olive oil & goats cheese

Prepare figs for roasting, cut a cross on top of the figs, no more than a third deep. Cover a baking tray with baking paper, place figs and prosciutto on tray and drizzle (figs only) with balsamic vinegar. Bake in hot oven for 6 to 7 minutes. your bread with light brushing of olive oil, lightly spread some goats cheese over toasted bread, top with a piece of prosciutto and a roasted fig.

Note: you can replace balsamic vinegar when baking and wait until the end and use vincotto as a final garnish drizzled over the top. Delicious
